Macaroni cheese is a classic and you can’t get better than my mac n cheese (in my opinion). But to master a mac and cheese recipe? Well, you’ve got to commit to a little prep.

  1. Preheat the oven to 200ºC (180ºC Fan) and grease a 35cm x 20cm ovenproof dish.
  2. Melt the butter in a heavy bottomed pan over a medium heat, stir in the flour and cook for 2 minutes until it smells slightly nutty. Add the mustard and gradually add the milk and cream.
  3. Add the bay leaf and allow the sauce to simmer for five minutes.
  4. Remove pan from heat, remove bay leaf and add the cheddar, 100g Parmesan and cream cheese, stirring until all the cheese has melted.
  5. Meanwhile, cook the macaroni until al dente. Drain well and add to the sauce. Pour the macaroni into the ovenproof dish and top with the Doritos and any remaining Parmesan.
  6. Bake for 25-30 minutes or until bubbling and golden brown. Serve immediately.
